Cheese and tomato frittata

frittataMaking a vegan frittata is very easy. What it is not, is quick. Follow Your Heart egg is a really versatile product but it takes a while to cook. So this cheese and tomato frittata recipe is great if you really fancy a frittata but it is not a quick fix.

Makes 2 small or 1 medium frittata.


  • 115ml ice cold water
  • 2 table spoons Follow Your Heart egg
  • Handful of baby tomatoes
  • Grated vegan cheese to taste (your favourite brand)


Toughly whisk the ice cold eater and Follow Your Heart egg together. Add the grated cheese and stir. Then pour the mixture into an ovenproof dish and arrange the baby tomatoes cut in half on top. Then cook in the oven at around 180 °C. You need to check with a fork or kebab stick occasionally to see when it comes out clean, this may take up to 50 minutes! Like I said; it is not quick.
