What THIS vegan eats
A cold noodle salad can be a great addition to a picnic. The best thing about it is you can add flavoured oils or a store bought sauce to give it just the right flavour that you will enjoy. You can make up a garlic oil or something with your favourite blend of spices.
I am not going to give you exact measurements here because it will depend if you are making it as a personal packed lunch of family size picnic. Common sense will guide you.
Prepare and cool the noodles. Grate the carrot, half the baby tomatoes, and chop the cucumber. Quickly heat the pine nuts in a wok or griddle pan for a minute or two (no oil). Then add everything together in a bowl/lunch box and add the chilli sauce.
