Pesto pasta

As I have said before the aim of this blog is to show how easy veganism is. So why has it taken me so long to add my go to pasta dish? Pesto pasta is quick and simple and yet so filling and delicious.

This is such a fuss free meal that we often make it when on a self-catering holiday. I have made at home, at UK and French Centre Parcs, and even in a glamping tent. If you want a extra filling meal serve with homemade or store-bought garlic bread.

In case you don’t know; there are a few different brands of vegan pesto available if you are shopping in a vegan or wholefoods shop however it is Sacla Free From pesto that is sold in almost all UK supermarkets.

The following serves 2 good size adult portions and 2 kids side dish size portions. This is an honest sort of blog so I will just admit I still have not worked out the magic formula to cooking the right amount of pasta!


  • Pasta
  • Roughly ½ a jar of Sacla Free From pesto
  • A few handfuls of baby tomatoes
  • 2-3 large mushrooms
  • A drizzle of oil


Cook the pasta following the directions on the packet while you start chopping the mushroom and halving the baby tomatoes. In another pan cook the mushrooms in a little oil. Once the pasta is cooked drain it and add it back into the warm pan it was cooked in. Then add the baby tomato and cooked mushrooms along with the pesto and stir well. You can warm it on the hob for a minute to make sure it if all warm if you wish.
