Chilli and lime chocolate cupcakes

I had some left over chilli and lime chocolate bar and thought I might as well experiment with it by making cupcakes. I started throwing ingredients together hoping it would work and somehow it did!

I am giving you the measurements I used which may seem a little odd because I like to make 6 at a time. So just double it for 12.

Juice of 1 small lime
1/3 cup of almond milk
1/6 cup oil
1/8 cup coco powder
2/3 cup self raising flour
1/2 sugar
Pinch of salt
1/8 tsp bicarbonate soda
1/8 tsp baking powder
1/2 cacao and chilli mix
1/2 tbsp vanilla essence
50g chilli and lime chocolate

For the topping;
1/4 coco powder
1 tbsp lime juice
1 tbsp oil
3 tbsp golden syrup
Left over chilli and lime chocolate (optional)

Method

Mix the almond milk and lime juice together and leave to one side. Mix all the dry ingredients first, be sure to smash/cut the chocolate bar into smaller bits, and then add the vanilla essence, oil and the milk and lime mix. Quickly whisk and separate into 6 cupcake wrappers and bake for around 25-30 minutes. Cooking time may depend on your oven but a kebab stick or fork should come out clean if poked into the cooked cakes and the bottom should sound hollow i tapped.

For the topping mix the ingredients well and put on top of the cakes. You can use left over chocolate as sprinkles too.

In order the make these I used a GNAW chilli and lime chocolate bar and cacao and chilli spice mix. However if you can find this spice mix then adding a pinch of chilli powder would probably have the same effect.
