Extra easy Bruschetta

ITBIf you are looking for an authentic bruschetta recipe this is not it. After eating bruschetta as a side dish while eating out I decided to start experimenting with how to make it. To start with I used homemade dough like the restaurant I ate it at did and then I started using store bought bread. I attempted lots of topping idea before settling on this one.

It is really quick and easy and tastes wonderful. You can serve this with a salad and it makes an ideal lunch in spring or summer.

Makes roughly 6 bruschetta’s


Store bought FREE FROM pesto


2 red onions

3 medium tomatoes



Chop the onion and tomato and set aside. Slice the baguette diagonally in 6 slices and cook on a griddle pan (no oil needed). Once cooked spread with the pesto and top with the onion and tomato mix.
